I was looking to stock a 65 gallon tank with cichlids and I wanted to lightly plant it so I was wondering what cichlids don't eat plants.

Anubia, java fern, and my personal favorite lacy java fern all do well as far as not getting eaten. Cichlids will still dig them up however. Someone (Convict) put me on to an interesting trick to circumvent this situation. Crazy glue (gel preferably) the plants where the leaves meet the roots to rocks or driftwood. Good luck
