Took these rocks out of my sisters backyard, did the vinegar test and in the process of putting boiling water on them to finish the cleaning. Does anyone see an issue with the set up or the rocks?

Remember to make sure it is solid and stable, the cichlids will burrow either sand or gravel placed underneath, causing collapse of the stone work. I might be a bit concerned about the small size of some of the rocks you have down towards the bottom.
 
I have placed egg grate at the bottom of the tank to help support the weight of the rocks and as something to glue everything down to. I plan on gluing everything so it won't move.

If you "glue" things down you should be fine - the disadvantage of making the rockscape permanent is that it is generally a lot harder to remove troublesome or breeding fish that you might want to get out of the tank. I personally am not a fan of anything permanent in a cichlid tank - I find far too many reasons to have to tear the tank apart to get a fish out at some point. Some also might worry about the edges, as cichlids will some times scrape themselves up swimming in and out of the rocks. I've never really had any issues with that.
 
Theres only like 1 or 2 edges that are sharp and i put those as my base rocks so hopefully there wont be any issues there. If i dont glue them whats the best way to make them stay put? In my eyes i would rather glue them than have a broken tank but if i have a third option im all ears?

Placing directly on the egg crate will prevent the cichlids from burrowing under and using large enough pieces, solidly set will prevent them from collapsing the structure. I never glue anything in my tanks, just build a good solid rock structure.
 
Didnt go as high as planned wanted to save some room for swimming. What do you think?

Looks good and solid, if you have the rock, I would go higher. What type of cichlids are you considering? If its African's, its really more about places to hide, so the more rock you can stack the better off they will be.
