Are they fun, active, curious? are they better single, a pair, or two males?

It depends on the cichlid. Some are super aggressive, some are shy, some are playful and some are boisterous. I'd say singly or keep a pair. Again it all depends on the fish.
 
I just recently got an Apistogramma C. "Double Red" from Severum Mama (a member on these forums) and I'm loving him.

They are very intelligent and very curious fish, but they can be shy if your tank doesn't have a lot of dithers (dithers = not-shy fish that swim around all the time). He will gladly come to the front of the tank and visit with me when I stop by the glass, but I think it depends on the number of people around. (A tank in a busy room make cause them to hide more)

Here's a picture I took the day I got him. I really want to get a picture of him yawning because he flares up his red fins and his mouth gets huge. :)
