I have a rough idea of my tank community and I was wondering if you think it'd work.
55 gallon
Fluval 305 (up to 70 gallon but ideal for 55 gallon)

I already have 8 Rummy-Nose Tetras but was eventually going to add:
- 2 (paired) Apistogramma cacatuoides
- 1-2 Neon Blue Dwarf Gourami (most peaceful species supposedly)
- 4 Sterbai cory cats
- some kind of dwarf pleco possibly
Those are my main ideas but other options to add as well (or in place of) are
- 1 or 2 Bolivian Rams
- 1 or 2 Blue rams (heard they were difficult)
- 1 or 2 of the many types of discus

Any additional ideas would be grateful.
I would have to get the Apistogramma cacatuoides shipped to one of my LPS exclusively because they don't have them in stock but it's probably worth it because they're beautiful and hardy.
 
Discus in a 55 will be really difficult and is pretty much a no no. Plus they school so you would need more than 1 or 2.

You could also get a few more sterbai, in the 55 it won't impact you much.

I would go pearl gouramis if you are worried about peacefulness, some DG's will fight with each other and pearls get along well with each other. They are also pretty.

As for your pleco, a bristlenose would be a good common option.

You could definitely get some Bolivian Rams.
