I can already see what you mean by Discus being sensitive. Probably not what I am looking for.

How well would just a single Cichlid do with fish like Congo Tetras or Brycinus longipinnis?

Depends on the Cichlid a peacock might be okay mbuna will probably kill it

So, I guess my last question regarding this setup, Cichlids seem to perfer a higher PH level than the Bichir, Leoupard, and Tetras, If I were to throw a peacock in there would it be a problem for him to have lower PH levels?

I would say no, fish from the store are raised in a neutral ph and will be fine
