I haven't seen any uarus in my local fish store in a number of years.
It's a good store, not petco or anything.

Has anyone seen any?
Or are they dieing out or something?

They aren't farm raised, normally wild caught. You're most likely going to have to buy em online from someone like Jeff rapps.
