Definitely looks like "He" is a "She" and she looks to be holding, congrats!!!

Is it normal for their gills to be a little red and breathing a little fast?

Is there anything I should do? Do they eat when they hold eggs?

No they don't eat while holding eggs and fry, when she releases her brood she'll start eating again, keep watching her you are witnessing an amazing part of this hobby especially keeping African mouth brooders

Thank you! So is it ok to feed my other fish in the tank? What if she eats?

She swallowed them, not uncommon for the first couple spawns or if she got overly stressed.
