Why beef heart and not just steak?

In a discus thread people shared about creating their own food for 'em. All of the recipes used beef heart. Why beef heart? Why not steak? Where do you buy beef hearts?

If you can find a butcher you can get beefheart and If you ask the meat department in kroger they will get it for you.. Im quite certian other large grosery stores will do the same..HTH.. and by the way... it is cheap. but im not certian if there is another reason.. both are very high in protine.. Im assuming the heart is almost fat free though..
 
not necessarily. Beef heart has as much if not more fat in it then the tenderloin once it is butchered up.

There is more nutrients in the heart then most other parts of the animal.

This makes sense if for absolutely no other reason than the superelevated amount of blood flow through the heart. Woulda been my guess as well.
