They will cause a bioload since they will produce ammonia, but it is very little compared to fish. I would be more concerned with starvation rather than a tank crash due to the bioload.

Just add a couple critters at a time (or as needed).

The rule of thumb used to be 1 snail/crab/shrimp per gallon. But you will get tons of die off, just add a few per week or two weeks to keep things in check.
