As long as you have proper light you can have one mushroom and it can turn into multiple mushrooms....

mushrooms will reproduces and make more on their own as long as you provide them good conditions. How fast they grow and split depends on the tank and lighting and all that. Ours just grew for several months and then just recently started splitting like crazy.

Also as Allen said it really depends on your tank. Things like lighting, water parameters and stability will go a long way in determining if and how fast they grow.
