Can shrimp and snails live with slighty higher than normal nitrates ?

It DEPENDS!

Which shrimp and snails?
Define higher than normal. Normal for a REEF tank is under 5, and hopefully ZERO.
Normal for a FOWLR is under 40, but strive for under 20.

Shrimp and snails can live under the above conditions if acclimated to those conditions.

So the same as fish really but I have had loads of snails all dead :/
