Hey, I have a 125 saltwater fish only tank. Currently not using activated carbon. Using a protein skimmer and a Rena filstar xp3 canister filter rated to 175gallons. I'm going to get a second xp3 filter and use activated carbon. Should that get my water to be crystal clear?

Water changes help, but in any tank you should go with activated carbon. Get that second xp3 as you said and things should be perfect. But yes, with that and water changes when you do get going it should be pretty clear.

Thanks so you would suggest that second canister?

Yep. You could also add phosban or something in addition to the carbon. Just be sure not to get aluminum based phosphate remover.
