What's the best way to get rid of nitrite? I've done water changes and it's still hi.

If you have nitrite you still in your cycle and give it time. It will convert in time. Don't do water change until cycle over. Then do few big changes to get nitrates down.

If your tank is established then you may have a ammonia spike. Maybe lost a fish?

I haven't even had any fish in the tank yet.

If you are still in cycling mode then you just leave the tank as is. The ammonia and nitrite should go to 0 all by themselves with no water changes needed until it's finished.

What did you use for your ammonia source?
