How much water should I change? The only thing I can do is change water and get more live rock to get the ammonia down?

I'd do as large a water change as you could. 80% or so. I would really think about returning some of the fish to your LFS or at least have them hold it while you finish your cycle and as you add more rock.

Ammonia removers are also sold as a mechanical filtration. TBH I haven't used any and can't comment on their effectiveness.
