I realize that using distilled water for your water source eliminates the potential for introducing phosphate to your aquarium.

My question is, with time does phosphate build up like nitrate and nitrite?

The primary source of PO4 (if not using tap water) is food. Overfeeding will easy begin introducing high levels of PO4 into a tank.

Yes phosphate levels can go up usually from lack of water changes and food and waste
