I have six fairly large hermit crabs in a 37 gallon tank. I would like to add one or two shrimp to the tank. I know that hermits will kill snails for their shells, but will they leave shrimp alone and vice versa?

hermits are way too slow to catch shrimp, you should be fine. Get yourself a dozen or so different sized empty shells and scatter them about the tank and you won't have to worry about the hermits eating snails either.
