Yes, a snail grows it's own shell, while a hermit steals theirs, usually after a fine meal of escargot

from what I understand snails also consume Calcium, in order to grow there shells, so if thats true you might want to check cal, if you don't already. whether they consume enough cal to make the levels drop between water changes I dont know.
