Yellow Longnose Butterfly fish Question

I have a Yellow Longnose Butterfly fish in QT. I was looking in the tank today and he swam to the top of the water and started spitting water up in the air. Is this normal for them? What is the purpose of it?
 
I was watching the discovery channel and they were showing fish doing this spitting water at a insect and when it falls in the water they would eat it. But this was on fresh water fish??
 
I believe it is a dominance sign, when a male (generally) is in good health and strong it will generally do this to show its dominance.. Thats what i heard anyway..
