55 Gal REDO!

So I am NOT new to fish keeping... I use to have a phenomenal cichlid tank, and breed shrimp and electric blue crayfish (to name a few of the tanks).

However, it has been awhile and we are now farm owners so I just don't have the time for daily upkeep that I use to.

I would like to set my 55 gal backup, but I want it to be a very simplistic showcase piece with preferably one or two fish only.

What fish(es) would you use?

I don't care about price.

We have extremely hard water, as we live at 10,600ft in the Rocky Mountains and have a well.

I'm guessing you would be after African cichlids? (which unfortunately I can't help with). Else another idea was show quality fantail / veiltail goldfish. Not a fan of too compressed a body shape but every so often I pick up a goldfish book and am impressed with the colour symmetries from breeders.
 
Not after cichlids at all! Willing to venture into any type of show fish... Eels, goldfish, etc.
