begginer with problems

I just set up a 75 gal tank about a week ago. I check the water every day. I feed very light (only a few flakes per fish) and I feed only once a day. If the ammonia gets to 1.0 I'll do a 10% water change. If the nitirite gets to 5.0 I'll do a 10% water change. I added a bottle of Safe Start bacteria when I set the tank up. Two days later I added 6 black skirt tetra because they're a hardy fish. Sounds like you're tank is overstocked with not enough beneficial bacteria and you're over feeding. Last year I set up a 10 gal tank. It cycled with no problems. I check that water once a week and it's always fine. Hope this info helps.
