Clown knife fish

I've recently found myself the owner of a 15 inch clown knife fish, along with a trio of jack dempseys in a newly acquired 75 gallon aquarium. My question is, how often do I feed him/her? What do I feed him/her? Any help at all would be greatly appreciated, as though I've bred plenty of cichlids, knife fishes are far beyond my comfort zone

This is him yesterday
He jumped last night and was found dead on the floor this morning
In hindsight, rocks on the glass hood should have been a must. I've never kept fish this big before and didn't know. Still, I'm curious as to what he would have needed had he not jumped.
