Why would you? I'm sure you could depending on what they're preserved in, the ones I've seen are always in extremely salty water with spices and citric acid which I bet gets absorbed by the snail and may not be very good for your fish.

If you really wanted to use snail meat, I'd raise snails myself and use them. The canned sort have preservatives and seasoning added which is not good for fish, frankly, not very good for humans either.
