Do cray fish need access to air?

Do crayfish need a rock leading up to the surface because at my LFS they didn't have one and there tank was filled pretty much all the way. Do crayfish need to be able to breath from the air or can they get oxygen from the water. I do not have an air pump would I need to get one?

They take it straight from the water. In a few months of owning a wild caught he never went to the surface.
