I think I put too much food in the tank. This is my first time using freeze dried brine shrimp and I think I put too much in the tank. Can over-feeding just ONCE lead to disaster? I don’t mean water quality, as tomorrow is a PWC day. Could overfeeding my fish just once lead to death?

You probably would really have to over do it enough to cause the fish to eat themselves to death. A lot of the freeze dried stuff consist of tiny fragmented particles / bio-dust, which will spread over the surface of the water. Not much nutrition in that. The fish will ignor most of that stuff. No worries.
