1. My PH dropped from 7.6 to between 7.0 - 7.2 in my fishless cycle. Should I be worried about this? If so what should I do to fix it?

2. Also my always ammo goes from 2.0 down to 0.25 in 24 hours everyday for about a week now, but it never goes down to 0. Is this normal? Should I let it go to 0 before adding more?

Just keep dosing the ammo up to 3-4ppm every 24 hours.

pH fluctuations are common during cycling, but if you notice dramatic swings you should do a 50% pwc to restore the buffers in the water and keep things stable.

Just keep doing what you're doing and wait it out :)

I normally re-dose ammo to 1-2 ppm is that too little?

The amount you dose will dictate how large of a bacterial colony you develop during the cycle. 4ppm is normally recommended, but it is usually overkill and designed to handle fully stocking the tank all at once.
