Question on freshwater correct testing results

I've been in the reef hobby for about 15 years and feel I understand pretty much everything one could know. But here's my problem. I just started a large freshwater tank and I have no idea what I should test for, or what the test results should be. I have a 125 gallon tank, 50 gallon sump with bioballs and sock, uv sterilizer, 1200 gallons an hour cycling, powerheads in tank, and have some Oscar's, catfish and knife fish.
 
Once the tank is cycled...I only test ammonia, nitrIte, nitrAte and pH a couple times a week. As I'm 100% sure you know...you want 0 ammo, 0 no2 and nitrAtes at or below 20 in freshwater.

I absolutely ignore GH, kH, phosphates and even pH unless there is an extreme level which would require adjusting (which is virtually never necessary IMO in FW).
