Did a search, but couldn't find anything.
I'm setting up a 55 gallon long fresh water tank.
I'm going to be using sand for the bottom.
Not sure on the depth of sand? Is 2" good? More or less?

If it's not planted then it doesn't matter. If it's planted then 2 inches or more will be fine.

My standard 55 has about 2 inches in it and it only took 1 50 lb bag of pool filter sand

I was going to use a 2NS sand, from the local gravel company.
It's a little courser than beach sand. Any problem with that?
 
If it contains silicates you will likely have a diatom bloom. It will look pretty bad (yet harmless) but once the diatoms eat all the silicates it will all clear up.

The only reason I used pool filter sand is because it's coarser than play sand and I've been generally happy with how it has stayed on the bottom and doesn't really get in the water column. A little cloudy after water changes in a picture, but not noticeable otherwise.
