Currently I have a 110 planted tank with the below in it:

16 Rummy Nose
6 Mollies (I don’t want but they are rescues)
4 Cory Cat
4 Ottos
3 Weather loaches
3 Angels
3 Devils Spikes snails
3 Rabbit snails
And 2/3 Nerites

I was thinking about adding more Rummy noses to have a larger school, would this be to much?
 
You could double the size of your Rummynose school and be okay. I keep 12x Red Eye Tetras, 12x Buenos Aires Tetras and 5x Diamond Tetras as well as a school of 6x Silver Dollars in my 120 gal. All healthy and happy. The tank only looks crowded at feeding time.
Rummynose don't generate much waste.
 
I like the school look, would different type of tetras school or should I just increase the size of the one I have
 
You could actually do both. Increase the size of the Rummynose school, then add a good sized school of another, non-plant eating, tetra.
