Switching gravel?

Hey I need some advice on how to switch out my gravel. It's for a 50 gallon tank. There is large river rock type substrate in there right now. I would like to switch to a finer gravel as I think it will look and work better for plants. Here is a pic.
I've changed my gravel in a different tank and it went terribly. Ended up losing 5 fish. Don't want that to happen again! Any advice will be greatly appreciated!

Put all livestock into a 5g bucket.

Drain all the water.

Remove decor and old substrate.

Put in new substrate. If the new substrate is sand gently fill it back up to prevent a bunch of clouding.

Acclimate fish back to the tank.

This is what I did last time and had a Huuuge ammonia and nitritre spike. Didn't even add that much new water.. so I'm just scared to get a spike.

Sturdy Cat litter scooper. New or immaculately clean of course. Scoop gravel out. Do large Wc... abt 50%. Put new, rinsed, clean substrate in. Add new conditioned water. Let settle. Enjoy.
