I have a blue crayfish and he is the only thing in the tank other than the plants. He is tearing the damn tank apart. He loves to eat the plants in the tank. That's not really my concern. As long as he is happy, that's fine with me, but I was concerned that with so much plant food available to him, will he overeat and cause himself other problems? How would you recommend I remove the excess dead plant matter?

No he won't overeat.
but they do love to store things for later, I would still remove any excess food and dead plants so not to bring your water parameters to high.
just scoop them out with your hand or a net.

Also, watch your filter closely to make sure all that shredded plant matter doesn't clog it.

Alright. Thanks for your responses. I did notice there was a pile of leaves in front of his little cave. I pulled a couple of the plants out ad moved them to another tank, because I can't keep up with the mess.
