My blue crayfish just molted today while I was at work. I know they are supposed to be weak afterwards but she hasn't moved at all except occasional antennae movement. Is this normal?

Yes this is completely normal. Make sure she is not bothered by other tank inhabitants, for crayfish are extremely vulnerable after they molt; their exoskeleton is not yet hard, and they are susceptible to bites and nibbles. Also, make sure your water is hardy enough for them to recreate their shell. In other words, if your water has insufficient calcium levels, you can drop calcium pills in your tank. If you feel uncomfortable with the pills, there are many other solutions. Best of luck!

Thank you very much! She ate her whole shell so that's good and I also had to move her to a tank with more aggressive fish because she was munching down on my peaceful ones and her shell was as hard as can be so that's good. Thanks again!
