I always hear people at pet shops talk about how important air stones are even with reef tanks. Yet even at pet shops and pictures of other people tanks online I hardly ever see them. What am I missing

Nothing but small current and increase surface area movement
 
So with proper current like a healthy tank should have anyway, you would no longer need air stones?
 
You don't want air stones. When the tiny bubbles pop in a saltwater rank there is more of a tiny splash than in freshwater. That gets on the lid, light covers, tank sides and everything else. Then the salt gets left behind when it dries.
