How many pounds of live rock should be in a 55 gallon tank?
 
No less than 55lbs. (General rule of thumb is at least 1lb per gallon). Above that and it's your call based on the geometry of the tank and the rock you have in order to provide enough hiding and swimming areas.
 
The entire "weight" rule of thumb makes no sense to me...

Rock can be extremely porous and very light, or dense and very heavy... Porous rock will hold much more bacteria then a solid dense piece of rock.

The more the better.
 
Agreed...For reference, I use 20lbs of BRS Fiji rock in my 20 gallon nano. It's a "middle of the road" rock in terms of porosity.
