I think that skimmer will suffice. I did a little research and found mixed reviews. Almost every site said you will need to clean/change your airstones frequently so you should definitely stay on top of that to make sure your skimmer is skimming as efficiently as possible. You seem like you want a real low bioload so it should be more than fine. My skimmer is a POS but I do 20% changes weekly.
