PWC or no? Cycle

I've had my 75 gal. tank cycling for about 2 weeks now. I have approx. 90 lbs live sand and about 75-85 lbs of live rock. I have been dosing with Ace Ammonia. I'd rather know the exact ammonia rather than using a shrimp.

Here are my readings. I'm using the API saltwater master kit.

I am aware that high nitrites can cause a false reading on nitrates, so I'm not too concerned about the nitrate readings. But I've been adding enough ammonia daily to bump it back to 2ppm. It is completely gone within 24 hours. My nitrites have gone off the charts, reading 5ppm for several days. I wasn't concerned until I saw my pH starting to drop. Should I do a PWC and keep adding ammonia? Neither, both, or just one?
 
You dont do a PWC untill your cycle is complete. Then a 33% PWC. Unless you have some livestock in your tank and hopefully that`s not the case.
 
Just checked the pH again, and it's back where it was. I must have shorted it a drop when it tested low..

No livestock yet, cycling sucks!!!
