quick question about curing live rock

As I've said before, I brought 85 to 90 pounds of coral rubble back from Hawaii. It's been curing for nearly a month. The ammonia is at zero, and the nitrite is at .25 to .50. I want to get it into the tanks this weekend if possible. Here's the question. With these water results, does this mean that everything that's dead has cycled out , and if I get rid of the water and put the rubble in the tanks, I will be safe. If there is no more ammonia does this mean the dead stuff is gone? It's just a matter of time till the nitrite cycles out? Should be safe to add rubble only to tanks now?
