3 gallon Betta tank - Best heater?

I had this posted on another fish forum, but I cannot access that site today for some reason. So, I am coming here in hopes of getting some help.

I have a new 3 gallon tank and I want to know what is the best heater?
I would like it to be adjustable if possible, as I don't think I would trust one that you can't change.

Also, what kind of thermometer is best? (Any?)

My DIY lid. -> The pet store I went to had this large "Critter Tote" but the lid was missing. They gave me 50% off so I took it!
The lid here is made from a storage bin lid. The center blue part is from a tiny one-gallon I had Opalescent in for the first few days. I kept this part for the LED lights and feeder door. Looks a little funny with my colorful tape, but it works!

A couple of pics of Opalescent on his first day with me.
I believe he is a Double Tail even though he was labeled as half-moon.

I do not know why he has that "bite" out of his back. Best I can figure it is an old injury, as he does not look deformed otherwise. It is fully covered in scales, so it is not an open wound.

Anyway, please help me find a suitable heater!

I am NOT planning to use a filter at this time. I had one in the past and never could get it to work for me. I am fine with doing regular water changes!

I also have some duckweed on the way to help with the tank health. I know it's messy, but I like it! I had it in the past before.
