API Nitite/NitrAte tests

Can someone please tell me what color the test tube water is when the trites and trates "go off the chart."

I am at day 25 fishless cycle 10 gallon. Every 24 hours the ammonia goes from 4 ppm to about 0.1 and the nitrites are always at 5.

For nitrite, it could be a very deep purple, darker than the last color on the chart. Also sometimes if nitrites are extremely high, they could start off as purple and then end up being light blue or gray. Watch the drops when you put them in; if they turn purple immediately then it's probably very high. Also watch the tube during the 5 minutes for color changes, see what colors it goes through; if it runs through the purples and then ends up blue or gray then it could be off-chart as well.
