We have finally got a stable tank and are looking at what to add next. What would people recommend in a tank containing one molly and two neon tetras?

Mollies need far more space than that. Not only do they have a large bioload but they get rather big too. 3-6 inches depending on the type you have. Personally I wouldn't go smaller than 30 gallons. They are also social fish, while not schoolers they do like to have a bit of company of their own mind, so another 1 or 2 for company would be fantastic in a larger tank
I'd either rehome your current fish or upgrade your tank personally. If you get a 30 gallon you can up your neon school to about 6-7, have a couple mollies and still have wiggle room for something else.
Sometime people have luck with other fish and schooling but it wouldn't work with just any tetra. It would need to be a similar fish most likely, like a black or green neon or maybe cardinals. You couldn't pick say a black skirt tetra and stick it in there and have them school. You're tank is also too small for tetras really. Your tank is about 6 gallons and that really doesn't give many options because it is so small.
