Fish in cycle

I decided to start a new tank I haven't done one in a few years. I had downsized when I moved and habe decided to expand again. I have started a shrimp and snail only tank. Everyone is doing well. But my numbers are odd for a cycle imo. Its been a week. My levels are at ammonia 2. Nitrite .25. Nitrate 40. BEFORE my water change for the day. I use api master test kit.

Do you have nitrates in your tap water? Are you sure your nitrate test is accurate?

Also, 2ppm of ammonia is well past the point where I would do a water change with a fish-in cycle.

Nope my tap is fine. Yes it is accurate. It is only 6 months old. My other tank is fine. Yes i do water changes. as stated above this is taken before the water change.
