fishless cycle

cycling a 55g tank for the past month. I have been adding flakes daily. A couple days ago I added tetra safe start. Today my ammonia is about 1, nitrites are at least 2 maybe closer to the 5, and the nitrates look like about 30. I am bad with colors so not positive. I want to add fish in the next 2 weeks. What do I do now? Water change?

Ammonia and nitrite still too high. Preferably, both should read zero about a day after the last time you added ammonia. In the case of flakes, it does take time for them to breakdown into ammonia.
How much, approximately, flake food is added each day?

Just a pinch everyday. I know that's a terrible measurement
