high nitrites in fish in cycle

My API reading are under .25 ammonia 3-5pp. Mirror and 15 pp. nitrate.

I missed a day of tests and had really high nitrite reading doing a 50% water change

Sorry I'm not completely understanding your test results. A completed cycle will be consistent readings of 0 ammonia, 0 nitrites & some nitrates.
 
Then your primary bacteria aren't well enough established to keep up with the ammonia output of your fish. When they are, the ammonia will drop to zero.

Similarly, your secondary bacteria aren't well enough established to keep up with the nitrite output from the primary bacteria, hence the nitrites in your water. Once they grow enough bacteria to match nitrite output, then your nitrites will drop to zero.

Then you're cycled.
