I have and 75 gal tank and I plan on adding African haps/peacock cichlids to my tank as juveniles and my main question is how many can I add?

I have a zig zag eel, and plan to add a Bristlenose Pleco another question how many Bristlenoses should I add?

My filtration is one canister with sponge on Intake (cascade 1200) and HOB Marinland emperor 400 and a 20 gal sponge filter and 2 800 GPH circulation fans!

You need more rocks and small cave areas for the Africans.

My suggestion would be 18 Africans but you got an eel that'll grow to 3 feet long? I don't see the eel being a problem for the Africans or the other way around. There might be an issue trying to feed the eel. Africans gobble up food quickly.
 
Looks like your tank is off to a good start. In a 4 ft. Tank, best to go with 5 or 6 all male Aulonocara / Peacocks. A few smaller Haps would be okay. The bigger ones do better in tanks of 5 ft. or more. I have absolutely no experience with eels.
Like KF noted, probably would be a good idea to increase the hardscape.
