Just started the fishless cycle today. I was wanting to put a betta in it. I was wondering if I could put more than one, either a male female combo or a couple of females. If not then I would like to put some shrimp in with the betta, either ghost or red cherry.

So can I put more than one? And if not, will the betta pick at my shrimp?

More than 1 Betta and you'll be looking for a fight. I have a Betta with ghost, RCS and AES (amano) and they all get along. I have DW and plants, so hiding spots help IME.
 
+1 to Mr. Limpet. Just do a betta and shrimp. Try ghost shrimp first, to test the waters. Some bettas will eat shrimp, some won't.
