Are you suppose to do exact week by week water changes? I have a 29 gallon FW pushing 200gph. I just did a 30% water change. And added prime in the bucket before I dumped it in. Should I get some kind of stress coat for water changes?

Prime is a good water conditioner so i don't think you need stress coat.

The weekly wc routine is just a recommendation that a lot of people go by for their routine maintenance schedule. Fresh, clean water is always good, but depending on stocking (i.e. nitrate buildup, etc) it could be let go for a few weeks or more without any significant issues.

+1. In my case, my tap water has pretty high nitrates so I am constantly battling nitrate buildup. Therefore, I do 50% water changes at least 2-3 times a week. It just depends on your situation.

I just did a water change and my readings are
Ammonia .25ish
Nitrite 0
Nitrate 5

Is my ammonia alright?

My tap water reading is .25 ammonia. And zero everything else
