The larger my Spotted Grouper grows the stranger he looks.

Did you treat your main with copper? I would not suggest using copper "for the heck of it".
When does he change colors? What are your water parameters? What size tank and other tank mates?

You should not medicate just for the heck of it and especially with such a harsh medication. Define looking sick other than faded coloration? When does the coloration fade? What size enclosure and filtration do you have? What are the two tankmates? What is your feeding schedule?
