Plate Coral question

Last weekend I put in a new white, pink tipped, plate coral. For the first few days everything was great, but then yesterday as I walked past the tank I saw it shrivel up to almost nothing. Within an hour it was coming back to normal and then it went again.
Since then it has returned to some normality in that the tentacles are extended but they seem empty and are just empty sacks swaying in the flow. the tentacles have gone an off white colour compared to the bright white they were when I got it.
All water tests show nothing out of the ordinary and none of my other corals or fish are showing any signs of stress.

Is this normal for this coral or is it something I should be worried about.

Many of these types of LPS corals will normally inflate and deflate the way you are describing. It is how they "collect" nutrient from the water.

I would suggest posting the necessary info about your tanks parameters/chemistry, general routine as well as lights just to be safe...
