I'm guessing you mean Sebae, Heteractis crispa?
If so, there's no such thing as a yellow one. It is a color inbetween natural (grey/brown) and bleached (white). The color change you are noticing is actually a good thing. It means the proper zooxanthellae in it's tissues is returning and regaing it's health. As for the tentactle deflation, it will happen from time to time and if temporary, nothing really to worry about.
What animals are in the tank and are your feeding the anemone directly/how much?
