Behavior of Angelfish?

The gurus at my lfs say to keep angels in soft water. In fact in the store they keep them in "soft water" section along with the dwarf chiclids and discus(not in the same tanks). They've had good luck with them in soft water. I kept them for years in hard water and did so, so. My next angel tank will be soft for sure.
 
I've had 2 angels that i've had for around 8-9 months now and they're kept in hard water. I also read they like the slightly warmer water temperature than other fish. Mine have grown to be big now, but i think they're both males and one has started to pick on the other one :/ Funny thing is whenever i go near the tank they come to the top of the water, begging for food. They're pigs really, always ready to eat.
