Want it give my gourami a 5-10 min salt bath in a 10 litre bucket. I've heard conflicting info regarding measurements some 25g per litre and some 3-5g per litre.

15 to 25g per litre for up to 15 minutes. This will treat gyrodactylus (skin flukes) and chilodonella.
Always remove the fish to fresh water when it shows signs of stress.
The lower dose you quote is really a log term bath as a general stress reducing 'tonic' for QT tanks etc.
